10 Minutes Microwave Recipe of Palak Paneer
So here I was almost moved with the sudden information of unexpected guest invasion for dinner. I almost felt myself lost in some abandoned island and almost in the middle of the nowhere. The clock already ticked at 8 p.m., it was a Tuesday and I was just back from work. Hence, I dint have much time to recuperate from the shock because guests were already on their way for whom I had to get down to cook. I rummaged through the refrigerator; thankfully I found paneer and spinach. They came as a savior to me and this is what I made for my guests. An easy to cook yet delicious recipe of paneer and I fondly named it Yummy Spinach Paneer. My weapons for war were a simple microwave cookware or rather bowl and a spatula. This is how I made it :

Ingredients Needed:
- 2 large bunch of spinach
- 250 gms of paneer
- 3 to 4 tomatoes
- 3 green chilies
- ½ tsp of garlic paste
- ½ tsp of cumin seeds
- ½ tsp turmeric powder
- ½ tsp coriander powder
- ½ tsp garam masala
- Some oil and butter
- Salt to taste (Sanjeev Kapoor Special)
- A pinch of sugar (optional)
- And, fresh cream for princely garnishing
Procedure:
- Take the spinach and separate it from the stem, wash it and place it in a microwave proof bowl. Cover it with a lid and microwave it for 4 minutes.
- Wash the tomatoes and cut them into dices.
- Blend the diced tomatoes and green chilies in a blender and keep it aside.
- Take square pieces of Paneer and apply a little salt on them before keeping it aside. U can avoid seasoning the diced paneer; this is something I like doing.
- Now take out the bowl of spinach from the microwave cool it and then blend it in a mixer to paste.
- Take another microwave safe bowl put some oil into it and add the cumin seeds, turmeric powder and coriander powder. Cover it with a lid and microwave it for 2 minutes.
- Now take out the bowl, add the tomato puree, spinach paste, and salt, a pinch of sugar and garam masala and again microwave it for 3 minutes.
- Palak paneer is ready to be served add 1 tsp of butter and garnish it with fresh cream.
